Since childhood, ice cream has been my ultimate indulgence, a frozen treat that never fails to make me smile.
Vanilla surely tops my favorites, but there is no denying the rich, nutty flavor of Pistachio ice cream.

And growing up, I tried homemade ice cream but was never satisfied with the texture.
But today, I am sharing the easiest No Churn Pistachio Ice Cream with you, and the texture is just like store-bought ice cream!

The delicate pistachio paste, sweetened condensed milk, pistachio essence, pieces of whole pistachios, and whipped cream create an irresistible frozen dessert that will leave you craving more!

  • It’s super easy: This recipe requires no special equipment or churning, making it incredibly simple to prepare. A bowl, an electric beater, and readily available ingredients are all that you need to make this recipe.
  • No CMC: I haven’t used CMC for this recipe. Only the basic ingredients are readily available in your pantry or a nearby store.
  • It’s Versatile: You can add chocolate ganache and chocolate chips for a chocolate ice cream, hazelnut paste, and coffee essence for hazelnut mocha ice cream, or vanilla bean paste for a creamy, rich vanilla ice cream. Add any flavor combination of your choice for a wide variety of flavors just using a single recipe!

Important Ingredients In No-Churn Pistachio Ice Cream

  • Whipping cream: I have used non-dairy whipping cream for this recipe since dairy whipping creams aren’t easily available in India. But I recommend using dairy-based whipping cream, if readily available, for an even rich creamy texture. You can use brands like Rich’s or Tropolite for non-dairy whipping cream. 
  • Condensed milk: This ingredient gives the no-churn ice cream its smooth and creamy texture. It acts as a binding agent, giving the desired sweetness and preventing ice crystal formation while freezing ice cream because of its sugar content.
  • Pistachio paste: This ingredient gives the recipe a rich and nutty flavor. I roasted the pistachios and ground them in a blender to a paste consistency. You don’t need to add any oil to make the paste. Just pulse the roasted pistachios and trust the process.
  • Whole pistachios: I have added whole pistachios to the ice cream for a nutty crunch in every bite. It heightens the overall mouthfeel. You can also use roasted whole pistachios for a nuttier flavor.
  • Salt: I have added salt to heighten the flavor of the ice cream.

How To Make No-Churn Pistachio Ice Cream

  • Collect the ingredients: In a bowl, collect non-dairy whipping cream, condensed milk, pistachio paste, salt, a few drops of pistachio essence, and two drops of edible green gel color. 
  • Beat the mixture: Using an electric beater, beat the above mixture until you get a thick mousse-like texture.
  • Fold in pistachios: Fold in chopped and whole pistachios to the ice cream base and mix.
  • Freeze: Pour the mixture into a tin of your choice and top it with some chopped and whole pistachios. Now freeze it for at least 3 to 4 hours or until it is firm enough.
  • Serve: Once the ice cream is firm, scoop it out. Make sure to dip the scooper in warm water for easy scooping.

Chef Tips For The Recipe

Roast the pistachios correctly.

Roast the pistachios in a preheated oven until they turn aromatic. This step brings out the natural oils, intensifying the flavor, which makes the perfect pistachio paste when ground. 

Let it freeze!

Allow the ice cream to freeze for at least 3 to 4 hours or overnight for the best results. This step will give it ample time to solidify and develop its smooth texture.

Quick tip for folding.

When adding chopped pistachios, gently fold them into the mixture to preserve the airiness of the ice cream.

  • 250 g Non-dairy whipping cream
  • 150 g Condensed milk
  • One pinch of Salt
  • 50 g Pistachio paste
  • Two drops of Edible green gel color
  • 12 drops of Pistachio essence
  • 20 g Chopped pistachios
  • 15 g Whole pistachios

Instructions

  1. Collect non-dairy whipping cream, condensed milk, pistachio paste, salt, a few drops of pistachio essence, and two drops of edible green gel color in a bowl. 
  2. Using an electric beater, beat the above mixture until you get a thick, mousse-like texture.
  3. Fold in chopped and whole pistachios to the ice cream base and mix.
