What more do we crave other than this for an excellent weekend breakfast? Right?
This waffle recipe is crispy on the outside and soft and chewy on the inside. And it’s completely EGGLESS!
Did you know? Waffles originated in Belgium and were first showcased at an Expo in 1958 in Brussels.
And initially, the waffle batter was leavened with yeast, but now we use rising agents like baking powder and baking soda.
Now, my motive here isn’t to bore you with the history, BUT it’s been 65 years since these delicious breakfast delicacies have been introduced to us! And I couldn’t be more grateful!
When I was a kid, my mom made eggless waffles using those boxed mixes, and we would be mesmerized.
But ever since I became a baker and when after a few trials, I came up with this EGGLESS WAFFLE recipe, we haven’t returned to the boxed mixes.
And you can’t tell the difference between these and their counterparts made with eggs.

Important Ingredients In Eggless Waffles
- Curd: Since we are making an eggless version of waffles, we have used curd for the recipe. You can use either market-bought or homemade curd; make sure the homemade curd is thick and not too sour.
- Butter: I have used salted butter for this recipe, as we are making an eggless version, and it also enriches the batter.
- Baking powder & Baking soda: I have used both these rising agents in the recipe, as they’ll give the perfect rise to the batter by reacting with curd and milk in the recipe.
- Milk: I have used full-fat milk for this recipe for that rich flavor and also for adjusting the consistency of the batter
How To Make Eggless Waffles
- Preheat the waffle machine: Set the temperature to 200°C and let it preheat for 10 minutes. Meanwhile, prepare the batter.
- Sieve the dry ingredients: In a large bowl, sieve all the dry ingredients, i.e., all-purpose flour, castor sugar, baking powder, and baking soda. Give them a good mix.
- Add curd and melted butter: We’ll now add curd and melted butter to the dry ingredients and mix well to make a thick batter.
- Add milk: Since the batter is thick, add milk to it to adjust the consistency of the batter. Mix well, and you’ll get a smooth, lump-free batter.
- Add vanilla bean paste: Since we are making classic vanilla waffles, we add vanilla bean paste for that rich flavor. Mix well, and the batter is now ready to be baked.
- Grease the machine: Before pouring batter into the waffle machine, grease it with melted butter.
- Pour & Bake: Pour the batter onto the waffle machine, ensuring you don’t overfill till the top, as it will rise during baking. Let it bake for 3 to 5 minutes.
- Garnish: Once the waffles have been baked, remove them from the machine and garnish them with toppings of your choice. I have garnished them with vanilla ice cream, blueberries, mangoes, and maple syrup.

Chef Tips For The Recipe
Quick Tip For Flavouring.
I have used vanilla bean paste for the classic vanilla waffles. If you don’t want to use vanilla bean paste, use vanilla essence instead. Just replace 1 tsp of vanilla bean paste with 2 tsp of vanilla essence.
Quick Tip For Greasing The Waffle Machine.
I have used melted butter for greasing the waffle machine, but you can also use oil. I wouldn’t recommend it though as it will alter the taste of the waffles.
How To Store Eggless Waffles
Waffle batter can be stored in the refrigerator for a maximum of 2 days. Since it has curd, we recommend consuming it the same day.
Baked waffles can be frozen and stay fresh for a month; just cling-wrap them properly. When you wish to consume the frozen waffles, thaw them and toast them for a few minutes in the waffle machine.
