Every morning can be a pancake morning now. Yes, with my all-new oatmeal easy pancake recipe, you would wish to make them daily. They are soft and delicious and can be made with just a few ingredients in no time. 

Have you ever wondered if there is a healthy version of pancakes? With some more nutritious ingredients, you can easily make your regular pancakes more healthy and tasty. I will use oatmeal instead of all-purpose flour and honey instead of refined sugar in today’s recipe. You can easily call it gluten-free also, as it is purely made with oatmeal flour (no whole-wheat or refined flour is used). 

The best part is you can add on any topping of your liking. My personal favourite choice is a bunch of fresh fruits and berries with some honey or maple syrup drizzled on top.

  • Quick and Easy: The recipe is pretty simple and easy to follow. Perfect for a quick bite! Once you get the hang of it, the pancakes will be ready quickly. 

Important Ingredients Used In The Recipe

  • Oatmeal Flour: Definitely use rolled oats flour (not quick or steel-cut oats). The flour made from classic rolled oats will suit the best. You can even make your own oatmeal flour by grinding the rolled oats in a food processor. Blend it into a fine powder. 
  • Honey: Using honey as an alternative to sugar is a great option. It cuts down the calories from sugar. Honey provides light sweetness and also a nice flavour to the pancakes. 
  • Baking powder: since the pancakes are eggless, baking powder will help make the pancakes fluffy and soft. The powder reacts when it comes in contact with moisture. When the batter is being made, baking powder has already started its work to give rise to the pancakes. 
  • Vanilla essence and Cinnamon: classic vanilla essence with a hint of cinnamon powder will give the best flavour combination. They are not too loud and very subtle on the palate. Also, they are primary flavours that will combine well with any topping you choose. 

How To Make Oatmeal Pancakes

  • Preparation: Prepare your ingredients and equipment before starting with the batter. 

  • Batter: With a very simple all-in-one method, take a mixing bowl and put all the ingredients one by one into it, i.e., oatmeal flour, salt, baking powder, cinnamon powder, melted butter, vanilla essence, honey, milk and water. Mix the ingredients well using a spatula, ensuring no lumps are there in the batter. Leave the batter to rest for a few minutes. 

  • Prepare the pan: Before pouring the batter into the pan, prepare and heat the pan. Once the pan is heated, grease it with some butter using a pastry brush. 
  • Cook the Pancake: pour the pancake batter into the greased pan using a ladle and spread it every in a circular motion. Cover the pan with a lid for a minute. Flip the pancake and cook the other side with the lid on. After a couple of minutes, check the doneness and transfer it to a plate. Repeat the same with the remaining batter. 

  • Toppings: Once your pancakes are ready, stack 3-4 pancakes together and put your favourite fruits on top, e.g., bananas, strawberries and blueberries. Garnish it with simple maple syrup.

Refrain from overcooking the pancakes. They will be rubbery and may taste burnt. Just look for golden brown colour on each side (it should take only a few minutes on each side).

The trick to making soft and fluffy oatmeal pancakes is to let the batter sit for a few minutes. Yes, resting the batter helps oatmeal get soaked and softened.

Why does my pancake taste lumpy? 

Now, this could be because either the oatmeal flour did not mix well in the batter (you left flour pockets), or you did not grind the oats fine enough to become powder. 

Why are my pancakes dense? 

Since we are making them using oatmeal, a whole-grain flour, they can be a bit dense. But this recipe ensures they will be soft. So if your pancakes are dense, then that means you haven’t rested the batter long enough. You should rest the batter for at least 8-10 minutes. Also, ensure your baking powder isn’t expired.

Oatmeal Pancakes Recipe

Oatmeal pancakes: Give your pancakes a healthy twist with recipe and enjoy delicious breakfast every day!

Ingredients

Scale
  • 180g Oatmeal flour
  • 236ml Water
  • 100ml Milk  
  • 2 tbsp Honey
  • 30g Melted Butter
  • 2 tsp Baking Powder
  • 1 tsp Vanilla Essence 
  • ½ tsp Cinnamon Powder
  • ½ tsp Salt

For Topping:

  • Banana
  • Blueberries 
  • Strawberries 
  • Maple syrup

 

Instructions

  1. In a bowl, take all the ingredients together and mix them well. Combine to ensure no lumps are left. Cover and rest the batter for 8-10 minutes. 
  2. Take a frying pan and put it on low heat. Grease the pan with some butter. 
  3. Once the pan is ready, pour the batter and spread it in a circular motion with the help of a spoon or ladle. Cover the pan with a lid for a few minutes. Remove the lid and check if it has turned slightly brown in colour from the bottom. Now flip the pancake and cook the other side as well. Cover with a lid and cook for 2-3 minutes. 
  4. Once the other side is also cooked, remove the pancake from the pan and place it on a plate. 
  5. Repeat the same for the remaining batter. 
  6. Finally, place your favourite fruit toppings on the pancake, like banana, strawberry or blubbery and drizzle some maple syrup.

Your healthy and delicious oatmeal pancakes are ready to serve.
