Expanding my no-bake dessert recipe list, today, I bring to you the recipe for this quick, easy, and super delicious dessert that is loved by everyone. Since it is a no-bake dessert, it takes much less time to make as compared to any other dessert. 

The toffee almond barks are a perfect dessert. It has flavors of toffee, chocolate, and almonds- all in one bite. And the texture is fantastic as well. The crunch from toffee and almonds with smooth melting chocolate is simply delicious.

Important Ingredients Used In The Recipe

  • Butter: The quantity of butter is good enough to give a lovely buttery flavor to the toffee. When sugar and butter are heated together, the smokiness from the butter gets combined with the caramelized sugar. 
  • Castor Sugar: It is better to use castor sugar because of its size. The sugar will melt easily and evenly in the butter as compared to icing sugar or granulated table sugar. 
  • Vanilla Essence and Sea Salt: Both work as flavor enhancers for the toffee component. Vanilla eliminates the burnt flavor of sugar, while sea salt lifts the entire dessert flavor. 
  • Dark Chocolate: I have used 46.5% dark couverture chocolate by van Houten. It’s perfect for the dessert as it cuts down the sweetness from toffee, making it a beautiful pair. 
  • Almonds: The dessert is topped with Chopped almonds, so use fresh and good-quality almonds for this. 

How To Make Almond Toffee Barks

Preparation: Collect and measure all six ingredients required to make the dessert. Line a square baking sheet (baking tray with low height) using an aluminum foil. 

Melt Butter: In a heavy-bottom saucepan, take the butter and put it on low to medium heat for it to melt. Let the butter melt entirely on low heat. 

Add Sugar: Once the butter is melted, gradually add castor sugar and stir using a spatula. Keep stirring the mixture. The sugar will melt, and the mixture will start to turn amber in color. 

Add Vanilla Essence: When the mixture starts to boil, add the vanilla essence and stir it continuously. Let the mixture turn amber / light brown in color. 

Check Doneness: To check if the toffee is ready, add a few drops of toffee in water. If the toffee hardens immediately, that means it is prepared. 

Transfer Toffee into Mould: After the toffee is ready, pour it into the lined baking sheet and spread using a bent palette knife. Let the toffee semi-set at room temperature. 

Add Chopped Chocolate: Now that the toffee has set a little, sprinkle chopped dark chocolate all over the toffee. Let it sit for a few seconds, and you will see that the chocolate has started to melt. The heat from the toffee will melt the chocolate. Spread the melted chocolate over the toffee using a bent palette knife. 

Add Almonds and Salt: Lastly, add Chopped almonds and Sprinkle sea salt on top of the melted chocolate. 

Freeze: Keep the way in the refrigerator for 10-15 minutes to set. 

Serve: The dessert takes only 10 minutes to set, so after that, you can de-mould it from the tray and remove the aluminum foil from the bottom. Roughly break the dessert into chunks or barks and serve.

Be Careful When Working With Toffee.

Toffee is made of caramelized sugar, which needs particular attention when working with it. Be very careful while transferring and spreading the toffee, as the slightest drop can burn your finger. You may use gloves to be more safe. 

Variations.

I have added almonds on top. However, you can go ahead and try different nuts like hazelnuts, walnuts and even dried fruits like raisins, cranberries, etc. They all will pair well with chocolate and toffee. 

How To Store Almond Toffee Barks

You can store the bark in an airtight container in the refrigerator for 3-4 weeks. 

Storing it in the freezer will increase the shelf life to up to two months.

Can I use compound chocolate instead of couverture chocolate? 

Yes, you may use dark compound chocolate. However, you must know that it will change the taste of the dessert slightly. 

Can I add cream to the toffee? 

I wanted to make hard toffee, which is why I haven’t added any milk or cream to the toffee. In case you want the toffee to be soft and chewy, you may add a little bit of cream to it.
