How To Make Crumble NY Cheesecake Cookies

Preparation: The cookie requires to make three different elements. Collect all ingredients and tools needed to make these three elements. Line a baking tray/sheet with a silicone mat or butter paper. Preheat the oven to 180C (OTG mode: upper rod + lower rod + fan). 

Method For Cookie Base

Creaming: Cream the butter, castor, and brown sugar in a large mixing bowl. Beat until the mixture gets fluffy and light. 

Add Eggs and Vanilla: Next, add the eggs and vanilla essence and continue beating the mixture until the eggs combine well. 

Add Dry Ingredients: Add the dry ingredients, which are flour, baking powder, baking soda, salt, and crushed Graham crackers(1). Mix to form a smooth dough. 

Shaping: Using a large cookie scooper, scoop out eight evenly sized balls from the dough. Roll them in your palms and then coat them with crushed Graham crackers. Place them on a lined baking tray and press each ball until it reaches 3/4th inch in thickness. 

Bake: Bake the cookies in a preheated oven at 180C (OTG mode: upper rod + lower rod + fan) for 9-10 minutes.

Cool: Let the cookies cool down in the tray itself for 10-15 minutes, and then transfer them to a cooling rack. 

Method for Cream Cheese Frosting 

Creaming: Cream softened unsalted butter and cream cheese together in a bowl using a stand mixer or an electric hand beater. Beat until it turns fluffy. 

Add Sugar and Vanilla: Gradually add sifted icing sugar along with vanilla essence. Continue beating the mixture till the entire sugar dissolves and you get a voluminous frosting. 

Method For Crumble 

Mix All Ingredients: Take crushed Graham crackers, sugar, and melted butter together in a bowl and mix using a spatula. You should get a crumble texture. 

Assembly

For Cookie Dough

  • 170g All-Purpose Flour
  • 113g Salted Butter
  • 65g Castor Sugar
  • 55g Brown Sugar
  • 1 no. Egg
  • 100g Graham Crackers (1)
  • Pinch baking Soda
  • Pinch baking Powder
  • Pinch Salt
  • 1 Tsp Vanilla Essence
  • 50g Crushed Graham Crackers (2) for coating

For Cream Cheese Frosting

  • 113g Cream Cheese
  • 100g Unsalted Butter
  • 120g Icing Sugar
  • 1 Tsp Vanilla Essence

For Crumble:

  • 1/2 Cup Graham crackers (coarsely grind)
  • 1/2 Tsp Sugar
  • 1 Tbsp Melted Sated Butter

 

Instructions

For Cookie Dough

  1. Preheat the oven to 180C(OTG mode: upper rod + lower rod + fan). Line a baking sheet with parchment paper and set it aside.
  2. Cream the butter, granulated sugar, and brown sugar in a mixing bowl until it’s light and fluffy. 
  3. Add the egg and the vanilla essence to it. Mix it to incorporate the egg thoroughly.
  4. Add in the flour, graham cracker crumbs, salt, baking soda, and baking powder, and mix just until the flour mixture disappears.
  5. Using a large (¼ cup) cookie scooper, scoop out eight equally sized cookie dough balls, roll them between the palm of your hands, then roll them in the ⅓ cup of the crushed graham crackers.
  6. Place the cookie dough on the prepared baking sheet, gently flatten to about ¾th inch in thickness and bake in the preheated oven at 180C (OTG mode: upper rod + lower rod + fan). for 9-10 minutes.
  7. Let the cookies cool down on the baking sheet for 10 minutes, then transfer to a cooling rack.

For Cream Cheese Frosting

  1. Whip the softened cream cheese and unsalted butter in a stand mixer until smooth. You can use an electric hand beater as well.
  2. Add the powdered sugar in batches along with the vanilla essence and mix on high speed until light and fluffy. This should take 2-3 minutes.

For Crumble

  1. Mix the graham cracker crumbs with the sugar and the melted butter.
  2. Let the mixture cool down before topping your cookies with it.

For Assembly

 

  1. Fill a piping bag with a large round tip with the cream cheese frosting.
  2. Frost each cookie with the frosting at the centre.
