The recipe I am sharing today is my mother’s classic recipe, which she still bakes every now and then.
It is a harmonious blend of moistness and tenderness, which the recipe gets from the ripened bananas.

  • Ripe bananas: The star ingredient of this recipe, ripe bananas, add natural sweetness and moisture to the bread. They also contribute to the overall flavor and texture.
  • Oil: I have used refined vegetables for the recipe, which is helping in keeping the banana bread moist and tender. You can replace it with melted butter for an even rich flavor. For every 100 g of oil, use 125 g of melted butter.
  • Brown sugar: I have used more brown sugar than castor for this recipe. The molasses in brown sugar gives the recipe a distinct caramel-like and deep flavor. It also keeps the bread moist and tender.
  • Cinnamon: Cinnamon has a warm and comforting flavor profile that pairs exceptionally well with the natural sweetness of bananas. It adds subtle spiciness and depth to the bread, elevating its taste. 

How To Make Simple Banana Bread

Mise-en-place: Keep all the ingredients ready before starting with the recipe.

Prepare the tin: Prepare a rectangular tin by brushing some oil and then placing a piece of butter paper at the bottom.

Mash the bananas: Take peeled bananas and mash them using a fork in a bowl.

Add oil, eggs, and vanilla essence: Once the above texture is achieved, add oil, eggs, and vanilla essence to the mashed bananas and mix them. 

Add the sugars: Now add both the sugars, i.e., castor and brown sugar, to the above mixture and mix.

Sift the dry ingredients: Sift the remaining dry ingredients, i.e., all-purpose flour, baking powder, baking soda, and cinnamon powder, and mix to get a smooth batter.

Pour & Bake: Pour the batter into the prepared tin and bake in a preheated oven at 180°C for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.

Garnish: Once the banana bread comes to room temperature, pour melted dark chocolate over it and sprinkle some chopped almonds.

Chef Tips For The Recipe

Use ripe bananas.

Avoid using green bananas. The riper the bananas, the better the flavor and sweetness of your banana bread. Look for bananas with plenty of brown spots on the skin, as they will be the sweetest and provide the best results. 

Don’t overmix the batter.

When adding the dry ingredients to the wet ingredients, mix until just combined. Mix until there are no visible streaks of flour. Overmixing can develop the gluten in the flour and result in a denser texture.

Adjust the sugar levels.

Depending on the ripeness of your bananas and your preference, you can adjust the amount of sugar in the recipe. You can reduce the sugar slightly if your bananas are very ripe and sweet.

How To Store Simple Banana Bread

Store your banana bread in an airtight container at room temperature for 3 – 4 days to keep it fresh.

You can also wrap it tightly in plastic wrap and freeze it for longer storage. However, keep in mind that freezing may slightly alter the texture of the bread.

Simple Banana Bread

  • 1.5 no. Ripe bananas
  • 75 g Oil
  • 50 g Brown sugar
  • 25 g Castor sugar
  • 30 g Eggs
  • ½ tsp Vanilla essence
  • 145 g All-purpose flour
  • ½ + ¼ tsp Baking powder
  • 2 g Baking soda
  • 1 pinch of Cinnamon powder

Garnish

  • 50 g Melted dark couverture
  • 10 g Chopped almonds

Instructions

  1. Prepare a rectangular tin by brushing some oil and placing a piece of butter paper at the bottom.
  2. In a bowl, take peeled bananas and mash them using a fork.
  3. Once the above texture is achieved, add oil, eggs, and vanilla essence to the mashed bananas and mix them. 
  4. Add the sugars, i.e., castor and brown sugar, to the above mixture and mix.
  5. Sift the remaining dry ingredients, i.e., all-purpose flour, baking powder, baking soda, and cinnamon powder, and mix to get a smooth batter.
