How about a healthy, soft, moist, and fluffy oats breakfast that gets ready in under two minutes? Sounds like a dream, right? Nope, it’s not a dream but a beautiful and delicious reality! These microwave-baked oats are a great way to start your day with. 

Most baked oats recipes take at least 20-30 minutes to bake in the oven. I even posted a vegan baked oatmeal recipe earlier, which everyone loved. But many of you don’t have that much time to bake and wait for it. That’s why I have come up with a delightful and quick microwave-baked oats for you all. 

This dessert can be served as breakfast, a snack, or an after-meal dessert. Its texture is like a moist and fluffy cake and tastes almost like banana bread. It’s super healthy as it has peanut butter, banana, egg, natural sweetener honey, and doesn’t have any oil or butter. Sounds just too good to be true!!

  • Super quick: The batter and baking time both take significantly less time than the usual recipe. For the batter, you need to blend everything in the mixer grinder. For baking, you need to microwave it for just 1.30 minutes, and it’s done. How fast can one make a dessert? 
  • Healthy: It’s loaded with goodness and benefits. The recipe has no refined flour or fat like oil and butter. Instead, you get healthy ingredients like bananas, peanut butter, eggs, rolled oats, honey, and dairy-free milk. I can’t think of anything better than this, especially for breakfast. 
  • Delicious: Thinking about healthy baking, many believe it won’t be as tasty as regular desserts. But this recipe is an exception. It tastes like a moist cake with banana, peanut butter, and cinnamon as primary flavors. It tastes pretty delicious, and I can eat it anytime I crave it. 
  • Gluten-free: Since there is no flour in the recipe, this automatically makes it a gluten-free dessert.

Important Ingredients Used In The Recipe

  • Rolled Oats: I use the regular rolled oats you get in the market. Use good quality oats as they make for one of the major ingredients. Try not to use oats that are too thick. 
  • Peanut Butter: I have used creamy peanut butter. You can use a chunky one if you prefer that. You can also use homemade peanut butter if you have. 
  • Banana: Use a ripe banana for the recipe. Bananas, if used raw, would not taste good in the dessert. It will also not make the cake moist and fluffy. 
  • Honey: To use natural sweetness and avoid sugar, honey is used. It also adds a pleasant flavor to the dessert. 
  • Eggs: We need the cake to be moist, soft and fluffy. That’s why I have added egg to the recipe. 
  • Baking Powder: baking powder helps make the cake extra soft and tender. It really feels light in the mouth because of the aeration baking powder provides.
  • Cinnamon Powder: A dash of cinnamon powder enhances the overall flavor of the dessert. It complements the banana and peanut butter flavor and subsides the egg fragrance as well as the taste. 
  • Dark chocolate: I have added 46.5% dark couverture chocolate to the recipe. It tastes so amazing. You can use compound chocolate if you want.

How To Make Microwave Baked Oats

Preparation: Since there are numerous ingredients in the recipe, carefully collect and weigh these ingredients for appropriate results. Grease a ramekin mould with some butter. 

Blend Everything: In a blender jar, collect all ingredients, that are rolled oats, egg, peanut butter, banana, baking powder, cinnamon powder, honey, and dairy-free milk. Notice that we are not adding the chopped chocolate in the blender as we do not want to blend it. Now, blend these ingredients well until it becomes a smooth batter. 

Add chocolate: Add the chopped chocolate to the batter and mix. You can also add chocolate after pouring the batter to the mould on top.

Bake: Transfer the batter to the greased ramekin and bake it in the microwave for 1 minute and 30 seconds.

I kept my microwave at high and baked for 1.30 minutes. Each microwave is different, so you can bake it in 40-second blasts to check the doneness. A few seconds less or more can be done. 

Variations

You can make so many combinations and variations in the recipe. Add chocolate of your choice, milk or white. Then, you can add nuts like chopped almonds and Walnuts. You can garnish the dessert with some ice cream or chocolate syrup. 

How To Store Microwave Baked Oats

These microwave-baked oats are recommended to be served and consumed immediately. However, if you still wish to store them. You can put it in an airtight box and refrigerate for 3-4 days. Remember to reheat the baked oats for a few seconds in the microwave.

Can I bake the same recipe in the oven? 

Yes, definitely, you can bake. Place the ramekin in the oven in a preheated oven at 180C for 15-20 minutes with OTG mode lower rod only. 

The cake seems to rise too much, is it ok? 

The oats tend to fluff up a lot, so it may seem that the cake is gushing out of the mold. However, don’t worry; this rise will settle down once baked completely. 

Can I use instant/quick oats as well? 

You can use rolled or quick oats. Since we are blending all ingredients, the type won’t matter here.
