Emma Goodies’ Mug Cake Recipe

Want a cup of vanilla cake? Wait, what? Yes, you read that right! Vanilla cake in a mug is the best ever invention for sweet indulgence, any time you want. It’s super soft, easy to make, and quick. 

Inspired by the renowned pastry chef Emma Fontanella, today’s vanilla mug cake is one of her classics. I love her famous YouTube channel, Emma’s Goodies, where she uploads tons of her baking recipes. She also has an amazing section on microwave recipes, which gave me the inspiration to try more microwave-friendly recipes. 

If you have noticed, recently, I have been putting up more microwave-based recipes, whether they’re cookies, pancakes, or simple cakes. What I love about microwave recipes is that they are perfect for single servings and are super quick to make. 

This Emma Goodies Mug Cake is a simple vanilla cake. Its texture is super soft and moist. You can easily top it with any of your favorite frosting. I love Nutella, so I have added that for the topping.

  • Mess-Free: The mug cake recipes are pretty hassle-free. You don’t have to collect many ingredients separately; make the batter in bowls, then transfer it to a mold and bake. You can easily add all ingredients to the mug, make the batter in it, and keep it in the microwave for baking. It’s such a mess-free method. 
  • Bake it Anytime: I don’t like the fact that when I’m craving a cake, I will have to bake a whole cake for just a single bite. It takes loads of effort and your time. The great thing about this mug cake is that you can make it any time you want and not worry about any wastage. It’s perfect for a single serving portion, which you can enjoy any time of the day. 
  • Versatile: Since it’s a basic vanilla cake, you can add numerous toppings of your choice. You can even add chocolate chips, nuts, or sprinklers inside the batter for different flavors and textures. 
  • It’s Eggless: The recipe is eggless, which makes it more special as it can be enjoyed by vegetarians as well. The taste and texture are still very soft and unique despite being eggless. 

Important Ingredients Used In The Recipe

  • Butter: Salted butter is what we need for the recipe. That way, we won’t need to add salt to the recipe. Butter helps provide a lovely buttery texture and flavor to the cake.
  • All-Purpose Flour: Use all-purpose flour to make a light and soft cake. Using any other flour will change the texture of the cake. 
  • Baking powder: It helps rise the cake, making it incredibly soft and tender. 
  • Milk: I use full-fat milk for my recipes. It helps provide a great richness. You can use toned milk as well. 
  • Castor Sugar: Do not replace castor sugar with powdered or granulated sugar. Castor sugar helps retain aeration in the cake and also melts faster while cooking. 
  • Vanilla Essence: Use good quality vanilla essence and avoid using water-diluted ones.

How To Make Emma Goodies’ Mug Cake

Preparation: Simply collect all ingredients required to make the cake. Select your mug as well. 

Make Batter: Melt butter and add castor sugar and vanilla essence. Give this a nice mix. Add milk and stir again. Finally, add the sifted dry ingredients and make a smooth batter. Make sure there are no lumps in the batter.  Transfer the batter to a mug.

Bake: Place the mug in the microwave and cook it for 1-2 minutes until it rises to the top and seems cooked from the inside. You can do the toothpick test. 

Serve: Spread some Nutella and garnish it with rainbow sprinklers. Enjoy your easiest vanilla mug cake dessert. 

Chef’s Tips For The Recipe

Bake In Blasts

Each microwave is different, so cook the cake in blasts of 30 seconds. Keep checking for doneness and bake for the next blast accordingly. Avoid over-baking the cake. 

Play With Flavors

Add chocolate chips, sprinklers, or favorite nuts to make new flavors. Top them with different frostings too. This way, you can create many recipes with just one cake.

How To Store Emma Goodies’ Mug Cake

This mug cake recipe is recommended to be consumed immediately. I would not suggest to store it. However, if you still wish to eat it later, you can keep it in the refrigerator in an air-tight box for three days.

Emma Goodies’ Mug Cake Recipe

Emma Goodies’ Mug Cake: Bake this classic vanilla cake in a mug for your any-time craving, and enjoy a great treat with your favorite topping. 

  • Total Time: 11 to 12 minutes

Ingredients

Scale
  • 22 g Salted butter
  • 25 g Castor sugar
  • 1 tsp Vanilla essence
  • 35 g Milk
  • 40 g All-purpose flour
  • ½ tsp Baking powder

Instructions

  1. Melt butter in a bowl, then add the castor sugar and vanilla essence. Give everything a mix.
  2. Next, add milk and stir again.
  3. Lastly, sift in all-purpose flour and baking powder. Combine well to make a smooth batter.
  4. Pour the batter into the cup, then microwave it for 1 to 2 minutes until it rises to the top and a toothpick comes out clean when inserted in the center.
  5. Once baked, spread some Nutella on top, then garnish it with rainbow sprinkles.
