How To Make Crumble NY Cheesecake Cookies

Preparation: The cookie requires to make three different elements. Collect all ingredients and tools needed to make these three elements. Line a baking tray/sheet with a silicone mat or butter paper. Preheat the oven to 180C (OTG mode: upper rod + lower rod + fan). 

Method For Cookie Base

Creaming: Cream the butter, castor, and brown sugar in a large mixing bowl. Beat until the mixture gets fluffy and light. 

Add Eggs and Vanilla: Next, add the eggs and vanilla essence and continue beating the mixture until the eggs combine well. 

Add Dry Ingredients: Add the dry ingredients, which are flour, baking powder, baking soda, salt, and crushed Graham crackers(1). Mix to form a smooth dough. 

Shaping: Using a large cookie scooper, scoop out eight evenly sized balls from the dough. Roll them in your palms and then coat them with crushed Graham crackers. Place them on a lined baking tray and press each ball until it reaches 3/4th inch in thickness. 

Bake: Bake the cookies in a preheated oven at 180C (OTG mode: upper rod + lower rod + fan) for 9-10 minutes.

Cool: Let the cookies cool down in the tray itself for 10-15 minutes, and then transfer them to a cooling rack. 

Method for Cream Cheese Frosting 

Creaming: Cream softened unsalted butter and cream cheese together in a bowl using a stand mixer or an electric hand beater. Beat until it turns fluffy. 

Add Sugar and Vanilla: Gradually add sifted icing sugar along with vanilla essence. Continue beating the mixture till the entire sugar dissolves and you get a voluminous frosting. 

Method For Crumble 

Mix All Ingredients: Take crushed Graham crackers, sugar, and melted butter together in a bowl and mix using a spatula. You should get a crumble texture. 

Assembly
