Marshmallow fluff is one of the most loved confections in America. And if I remember correctly, it was first mentioned in an American cookbook in 1869, but the recipe wasn’t disclosed then. This confection first hit the markets in 1979 and has since been one of the most loved confections.

Important Ingredients In Marshmallow Fluff Swirl Brownies
- Egg whites: The marshmallow fluff gets a cloudy, light texture from the nicely whipped egg whites.
- Lemon juice: It is an essential ingredient as it will help stabilize the meringue.
- Sugar syrup: For the marshmallow fluff, you’ll make sugar syrup using water, castor sugar, and corn syrup. This mixture will help get a glossy and fluffy texture.
- Castor sugar & brown sugar: I have used a combination of these two sugars for this recipe. It will give a fudgy indulgent texture to the brownie.
- Melted butter, curd, condensed milk, and milk: These ingredients add moisture and fat to the recipe giving it a perfect gooey texture. I have store-bought curd for the recipe. You can also use homemade, but make sure it is thick and not too sour.
How To Make Marshmallow Fluff Swirl Brownies
- Make the sugar syrup: Put water, castor sugar, and corn syrup in a heavy-bottom saucepan. Bring this mixture to a boil till it reaches 115°C. Meanwhile, we’ll beat the egg whites.
- Whip the egg whites: In a bowl, take egg whites and lemon juice together and beat the mixture until you get fluffy egg whites.
- Add syrup to the meringue: Once the syrup reaches the desired temperature, gradually add it to the whipped egg whites and continue beating. Make sure to add only a little syrup at a time.
- Add vanilla essence: Now add vanilla essence to the fluff and mix it nicely. Our marshmallow fluff is now ready.
- Melt butter and both the sugars: For the brownie, put the butter and both castor and brown sugars in a bowl and melt in the microwave.
- Add curd & condensed milk: Now add curd and condensed milk to the melted butter mixture and give it a good mix.
- Sift in the dry ingredients: It’s time to sift in all the remaining dry ingredients, i.e., all-purpose flour, natural cocoa powder, salt, and baking powder. Mix these until you get a thick batter.
- Add in the milk: To make the thick batter a bit smooth and flowy, add in the milk and give it a good stir.
- Add chopped chocolate: Lastly, add chopped dark couverture chocolate to the batter and give it a good mix.
- Pour the batter and pipe marshmallow fluff: We’ll now pour the batter into a greased and lined square ring. Then pipe marshmallow fluff blobs onto the batter and make swirls using a toothpick.
- Bake: Bake it in a preheated oven at 180°C (OTG MODE: lower rod only) for 25 – 30 minutes or until a toothpick inserted in the center comes out clean.

Chef Tips For The Recipe
Use a kitchen thermometer.
The sugar syrup must be at a specific temperature to get the fluffy, glossy marshmallow fluff. So, using a kitchen thermometer to track the temperature is a must.
Add the sugar syrup gradually.
While adding sugar syrup to the whipped egg whites, make sure not to add it at once, as it will deflate the fluff.
Line the tin correctly.
This step is also essential, as it will help you to remove the brownie from the ring easily. Otherwise, it will be a task!
Look out for the bake time!
Overbaked brownies are a big no! The longer you bake it, the more cakey and dry it gets. Bake the brownies until just a few moist crumbs stick to the toothpick, and you should be fine.
How To Store Marshmallow Fluff Swirl Brownies
Cling wrap these brownies and store them in an air-tight container at room temperature or in the refrigerator. It should stay good for 3 – 4 days at room temperature and 5 – 6 days in the fridge.
Just make sure to warm them up a bit before serving!
