As a baker, baking something healthy and delicious has been one of my biggest dilemmas.

And with more and more people shifting towards a healthy lifestyle, there is a growing demand for such baked goodies.

But as they say, “You are what you eat”, and I, as a baker, am what I bake 😉!

So, while working on this recipe, it being healthy and delicious simultaneously was my priority.

I have just used chocolate whey protein, bananas, eggs, all-purpose flour and honey for these delicious protein-packed muffins.

And Boom!

Important Ingredients In Banana Protein Muffins

  • Bananas: I have used ripe and fresh bananas for the recipe for the perfect texture and flavour. I recommend not using frozen ones.
  • Eggs: Along with providing structure and moisture to the muffins, eggs also contribute to the muffin’s protein conten
  • Good quality protein powder: Make sure you use a good quality protein powder for this recipe, as it will provide the flavour and desired protein content. I have used ON brand’s Chocolate whey protein for the recipe, readily available on Amazon.
  • Sugar-free chocolate and honey: To make it an even healthier recipe, I have used Ditch The Guilt’s sugar-free and vegan dark chocolate, along with honey, making it a no added sugar recipe.
  • Cinnamon powder: I have used it in this recipe, as it goes well with bananas and heightens the flavour.

How To Make Banana Protein Muffins 

  • Mash the bananas: In a bowl, take two ripe and fresh bananas and mash them using a fork until you get a mushy texture.
  • Add eggs, honey and oil: Now add eggs, honey and oil to the mashed bananas and combine. Once you get a slimy mixture, keep it aside.
  • Sift the dry ingredients: In a separate bowl, sift all the dry ingredients together, starting with all-purpose flour, protein powder, baking powder, baking soda and cinnamon powder.
  • Add the chopped dark chocolate: Add the sugar-free and vegan dark chocolate to the flour mixture. This step will ensure the chocolate doesn’t sink into the batter while baking. 
  • Add wet ingredients to the dry ones: Add the wet ingredients to the dry ones gradually and combine using the cut-and-fold method.
  • Divide & garnish: Prepare a muffin tray with five jumbo liners and divide the batter equally into them. Top these with some choco-chips. If you wish to make small muffins, this recipe will yield 8 – 9 small muffins.
  • Bake: Bake these in a preheated oven at 180°C (OTG MODE: lower rod only) for 25 – 30 minutes or until a toothpick inserted in the centre comes out clean.

Chef Tips For The Recipe

Refrain from over-mashing the bananas.

While mashing the bananas, make sure to avoid over-mashing them, as over-mashed bananas can lead to rubbery muffins.

You can replace Cinnamon.

Cinnamon is a personal choice in this recipe, although it improves the flavour. You can replace it with some other spice of your choice or omit it.

Quick tip for making it healthier.

I have used all-purpose flour for this recipe, but you can try this recipe with whole wheat flour for an even healthier version.

Do not overmix the batter.

You only have to mix the batter until everything comes together. Over-mixing the batter will lead to denser muffins.

How To Store Banana Protein Muffins 

You can refrigerate these protein-packed muffins in an airtight container for up to 4 – 5 days.

Banana Protein Muffins

  • 2 Mashed bananas
  • 40 g Eggs
  • 4 tbsp Honey
  • 32 g Oil
  • 108 g All-purpose flour
  • 60 g Chocolate protein powder
  • 1 tsp Baking soda
  • 1 tsp Baking powder
  • 1 tsp Cinnamon powder
  • Dark chocolate chips for topping

Instructions

  1. Take two ripe fresh bananas in a bowl and mash them using a fork until you get a mushy texture.
