Both yeast doughs the way a swimmer and a wrestler are both athletes ๐Ÿ˜„ The builds are opposite.

Donut dough is ENRICHED - eggs, butter, sugar, milk - a soft brioche-family dough built to fry tender and absorb glazes. Professional versions often run a preferment (a poolish) for flavour and lightness, and the dough is soft enough that it's rolled between mats and cut cold.

Pizza dough is LEAN - flour, water, salt, yeast, maybe a little oil - higher hydration, built to stretch thin and blister in fierce heat. Its character comes from fermentation time, not richness.

Swap them and you get sad results both ways: pizza dough donuts fry into chewy bagel-adjacent rings, donut dough pizza burns its sugar and bakes bready.

The honest shortcut for one-dough weekends: a soft enriched bun dough does donuts AND cinnamon-roll-style bakes decently. Pizza insists on its own lean identity. Two doughs, kids happier, physics respected ๐Ÿฉ๐Ÿ•
