resting vs proofing - are they the same thing? my croissants keep coming out flat
Every croissant recipe says things like "rest the dough 2-3 hours" and then later "proof 2-3 hours" and I've honestly been treating them as the same step. Park the dough somewhere, wait, continue.
Last two batches came out flat and greasy so clearly the dough knows something I don't 😅 Is resting just proofing with a different name? And where does each one happen - fridge, freezer, counter? Every blog says something different.
