Banana Protein Muffins
- 2 Mashed bananas
- 40 g Eggs
- 4 tbsp Honey
- 32 g Oil
- 108 g All-purpose flour
- 60 g Chocolate protein powder
- 1 tsp Baking soda
- 1 tsp Baking powder
- 1 tsp Cinnamon powder
- Dark chocolate chips for topping
Instructions
- Take two ripe fresh bananas in a bowl and mash them using a fork until you get a mushy texture.
- Now add eggs, honey and oil to the mashed bananas and combine. Once you get a slimy mixture, keep it aside.
- Sift all the dry ingredients together in a separate bowl, starting with all-purpose flour, protein powder, baking powder, baking soda and cinnamon powder.
- Now add the chopped sugar-free and vegan dark chocolate to the flour mixture. This step will ensure the chocolate doesn’t sink into the batter while baking.
- Add the wet ingredients to the dry ones gradually and combine using the cut-and-fold method.
- Prepare a muffin tray with five jumbo liners and divide the batter equally. Top these with some choco-chips. If you wish to make small muffins, this recipe will yield 8 – 9 small muffins.
- Bake these in a preheated oven at 180°C (OTG MODE: lower rod only) for 25 – 30 minutes or until a toothpick inserted in the centre comes out clean.
