- ¼ cup Cilantro
- 1 tsp Black pepper
- 1 tsp Garlic powder
- 1 tsp Salt
- 1 cup Margarita mix
- 1 tbsp Sugar
- ¼ cup Olive oil (extra virgin)
- 5–6 pc Cherry tomatoes
- 3 Chicken breasts
Instructions
- In a large bowl, add cilantro, pepper, salt, garlic powder, sugar, margarita mix, and olive oil. Give it a good mix.
- Wash the chicken breasts properly and then marinate them in this margarita mixture overnight.
- Next day, preheat the oven at 180C (OTG mode: upper rod + lower rod + fan) for 10-15 minutes.
- Take out the chicken breasts and assemble them in glassware side to side. Drizzle the marination on top of the chicken and put halves of cherry tomatoes.
- Bake the chicken breasts for about 10 minutes on each side or until the inside temperature of the chicken reaches 150-155C in a preheated oven at 180C (OTG mode: upper rod + lower rod + fan).
- Once you reach that temperature, remove the chicken and let it cook in its residual heat for a few minutes. Serve Warm chicken with your favorite side dish.
