- 2 Nos. Bananas
- 50g Castor Sugar
- 25g Brown Sugar
- 1/2 + 1/4 Tsp Baking Powder
- 2g Baking Soda
- 75g Refined Oil
- 30ml Almond Milk
- 1 Tsp Lemon Juice
- 1/2 Tsp Vanilla Essence
- 1/8 Tsp Cinnamon Powder
- 1/2 Sliced Banana (for garnish)
Instructions
- Prepare rectangular bread tin and grease it with oil. Place butter paper at the bottom as well. Preheat the oven to 180C (OTG mode: upper rod + lower rod + fan).
- In a bowl, mash the banana with a fork and add lemon juice to it.
- Now add in oil, vanilla essence and almond milk and mix until combined.
- Next, add both castor and brown sugar to the batter and mix them well.
- Sieve in the dry ingredients: all-purpose flour, baking powder, baking soda and salt, and give it a good mix. Make sure no lumps are there in the batter.
- Transfer it to the prepared rectangular bread tin and spread it evenly. Place the half-slit banana slice in the middle and press gently. Bake it at 180C ( OTG mode: lower rod only) for 35-40 minutes.
