Ingredients
For Banana Bars
- 2 nos. Bananas
- 75g Refined Oil
- 1 tsp Lemon Juice
- 25g Brown Sugar
- 50g Castor Sugar
- 30g Eggs
- 1/2 tsp Vanilla Essence
- 145g All-Purpose Flour
- 1/2 + 1/4 tsp Baking Powder
- 2g Baking Soda
- 50g Chopped Dark Couverture Chocolate
For Cream Cheese Frosting
- 50g Cream Cheese
- 100g Non-Dairy Whipping Cream
- 1/2 tsp Vanilla Essence
For Garnish
- Roasted Almond Flakes As Required

Method For Banana Bars

Prepare a 6-inch square ring by cling-wrapping it twice from the bottom and then by greasing oil. Place butter paper at the bottom as well. Preheat the oven to 180C (OTG mode: upper rod + lower rod + fan).

Mash the bananas in a bowl using a fork and add lemon juice to it.

Now, add oil, vanilla essence, and eggs to the mashed bananas and mix until well combined.

Sieve in dry ingredients that, are all-purpose flour, brown sugar, castor sugar, baking powder, and baking soda, and give it a mix.

Lastly, fold in chopped chocolate and transfer it to the prepared 6-inch square ring.

Bake it at 180C(OTG mode: Lower rod only) for 25-30 minutes.
Method For Cream Cheese Frosting
- In a medium-sized bowl, soften the cream cheese and set aside.
- Now beat whipping cream with an electric hand beater until a soft peak is achieved.
- Add the softened cream cheese to the whipping cream along with vanilla essence and beat again until adequately incorporated.
Method For Assembly
- Demould the cake and cut the dome using a serrated knife or cake leveler to make a flat surface.
- Pipe the cream cheese frosting on top and spread using an offset spatula.
- Lastly, sprinkle roasted almond flakes on top for garnish.
